Resumo: dc.description.abstractThe dyes are widely used in food industry, especially in processed foods. There is great concern about the spread of the use of synthetic dyes, as several studies show that the long-term of their use can be harmful to human health. This fact has encouraged research to produce natural colors, since these still have a high value when compared to synthetic, becoming disadvantageous for industries. Thus, this study aimed to assess the possibility of using cassava flour broth of hydrolyzate scan as culture medium for Rhodotorula glutinis yeast in the production of carotenoids, as this is a byproduct of flour industry it has low cost and a composition with the nutrients necessary for the growth of the microorganism. Therefore, were conducted three experiments in triplicate by varying the concentration of the cassava flour broth of hydrolyzate scan in the fermentation middle, after fermentations for production of carotenoids two methods of extraction solvent were evaluated: acetone and petroleum ether 1: 1 ( v / v); acetone and petroleum ether 1: 1 (v / v) associated with the ultrasound. To evaluation of the fermentation process were performed with pH analyzes, quantification of biomass, determination of reducing sugar and concentration of microorganisms, at the beginning and at the end of fermentation; and to evaluate the extraction of the carotenoid a spectrophotometer analysis (UV-VIS) was performed at 450nm followed by calculating the quantification of carotenoids by Lambert Beer Law. Analyzing the results was observed a decrease in pH values at the end of the fermentation process, as well as, a decrease of the concentration reduced sugars of the means. There was also an increase in the concentration of microorganisms and consequently of the biomass, suggesting that the cassava flour broth of hydrolyzate scan is suitable as a culture medium for obtaining carotenoids; and after extraction and quantification of carotenoids it was observed that the extraction process associated with ultrasound provided better extraction of carotenoids.pt_BR
