Resumo: dc.description.abstractPropolis is a complicated mixture, consisting of waxes, and resinous balsamic substances. This product has been highlighted due to their biological properties such as anti-inflammatory, antioxant, antitumor and antibacterial. A new type of propolis produced by honeybees, Apis mellifera species, genetically modified is being collected at the Federal Technological University of Paraná - Campus Two Neighbors. Until now no study had been conducted with this propolis, and for this reason, the study aimed to optimize the extraction process of bioactive compounds, and to evaluate the antioxidant activity of the ethanol extract of propolis (EEP) by three different methods. To this end, we performed a 2 ³ factorial design, which had as dependent variables the total phenolic content and antioxidant activity by the method of sequestration DPPH. After choosing the best condition of extraction, the EEP was evaluated for the levels of total phenolics and flavonoids and also for antioxidant activity using three different methods, kidnapping of DPPH, ABTS radical capture and method of reducing iron (FRAP). The results obtained in the experimental design showed that the best condition for the extraction of bioactive compounds was obtained at higher levels: time (45 min), temperature (70 ° C) and concentration of ethanol (80%). The levels of total flavonoids and phenolic compounds, tested for EEP, were 11,34 ± 5,77. 10 -3 and 1,86 ± 5,66. 10-2 mg EAG g-1, respectively. Regarding the antioxidant potential, the values obtained were 40,23 ± 3,61 μmol of Trolox g-1 for the DPPH sequestration method, 52,08±2,89 μmol of Trolox g-1 for the ABTS sequestration method and 60,67±0,26 μmol de Fe2+ g-1 for the iron reduction method - FRAP. The results showed that propolis produced in the town of Dois Vizinhos - PR is a potential source of bioactive compounds, which have antioxidant activity.pt_BR
