Resumo: dc.description.abstractIn the Southwest region of Parana there are about 277 rural family agribusinesses, which has one representative in the activity occupying the labor, rural labor, income generation and adding value to products. With the approval of Law 11,947, since 2009 the federal government establishes the use of at least 30 % of the funds transferred by the National Fund for Education Development (ENDF) for the National School Nutrition Programme (PNAE), the purchase of agricultural products family and enterprising rural family or their organizations. However, these foods must necessarily good conservation, rapid preparation and conditions that meet the health requirements. Based on this context, the study aimed at assessing the sanitary conditions through microscopic analysis checklist and wafer 6 family agribusinesses farmers who sell bakery products for school feeding by PNAE. It is the main criteria related to sanitary conditions of food such as handling, packaging, physical structure of establishment, utensils, sanitary and health organization, according to ANVISA RDC 275. According to the results obtained by microscopic examination of samples of homemade cookie, you can check the little knowledge of the manipulators with respect to hygienic habits and the correct preparation and safe food. Regarding the assessment of sanitary conditions, it can be observed that 100% of the establishments surveyed were in disagreement regarding sanitary facilities. It was observed that 33.3% had no sinks in the production, equipment, and utensils inadequate and improper cleaning the premises. As for lighting and electrical outlets all presented with poor hygiene and unprotected. With respect to handlers, 83% showed some non-compliance among clothing, hygienic habits and personal protective equipment. However, guided the handler corrective actions to be provided to the non-conformities found, finally, it is suggested deepening the body responsible for monitoring and training for these agribusinesses.pt_BR
