Resumo: dc.description.abstractThe security of raw material should start in the milk production and along of transformation process in the industry by providing a quality product, so consumers will have in hand an acceptable product and stable during its storage. The purpose of this study was to evaluate the profile of the quality of milk from producers from the north of state. The study consisted of the evaluation of data collected from 21 properties over the period July 2011 to January 2013, which consisted in monitoring somatic cell count (SCC), total bacterial count (TBC), fat, protein and dry matter deffated (DMF). The data were compared to the limits required by Brazilian law on Normative Instruction n. 62. The initial diagnosis of the properties recommended by EMATER showed that 66.5% of the properties had TBC within the limits established by Normative Instruction n. 62, and 81% of the properties were in the same limits for SCC. For chemical composition, only 24% of properties had fat content below of legal limits. In the seven properties visited it was observed that 86% of them use mechanized milking and milk cooler of direct expansion tanks, of which 57% of milk cooler have a capacity greater than 1000 liters. Only 29% of properties have a daily production volume greater than 300 liters per day. About 90% of properties performing one milking per day and 43% of properties have more than 30 animals stage of lactation. This study demonstrated that the properties have the capacity to increase production and productivity requiring intensive training in milking system, the adaptation infrastructure in milk production and improved animal handling.pt_BR
