Resumo: dc.description.abstractThis research aims to evaluate the effects of using soybeans greenish in industrial oil and chemical composition proximal. Soybean (Glycine max. L.) is affected by the lack or excess of rains during the stages of planting, harvesting grain filling and thus the use of grains, without the proper maturation, will cause problems in processing these, for industries producing soybean oil. In this study we adopted a survey so comparing samples with lower grain greenish and samples with high content of green soybeans and assessed the costs and consumption of clarifying agent to whiten and remove impurities and chlorophyll pigments present in the oil. Statistical tests were performed using the Spearman rank correlation and Kendall. Reviewed the grain crop soybean crops regarding 2011/2012 and 2012/2013. Tests of moisture, crude protein, total lipids and chlorophyll spectrophotometry. The analysis results obtained for crops where there is the occurrence of green seed like the 2011/2012 season, show that the physico-chemical parameters of protein, acidity and moisture do not correlate with green seed, but the chlorophyll content and total lipids correlate with the green beans, or green seeds in a batch will also have high amount of chlorophyll pigments and a low percentage of extracted oil. Thus, the use of soybeans with a high percentage of green seed is not recommendable for use in oil producing industry, because they cause significant changes in its chemical composition, particularly by the presence of chlorophyll and increase the costs and consumption of the clay fining bleaching process oil.pt_BR
