Resumo: dc.description.abstractWhitina global scenery, Brazil is the second biggest soya productor and exporter, what makes this grain e it is derivatives significant to the national economy. Among these derivatives we can mention oil‟s extraction and commercialization as one of the activities with big value. For that reason, there is the need of an efficient quality control of this oil. The quantity of immature grains interferes in the extracted oil‟s quality for the presence of chlorophyll. The pigments are liposoluble and for that extracted herewith the oil, resulting in a product with better shelf life and a yield between 2 and 3% lower. Herewith the goal to quantify the chlorophyll within in the vegetable oil extracted from the soya‟s grains some samples were prepared containing 0%; 1%; 2%; 3%; 4%; 5% and 6% of immature grains to investigate per spectrophotometric analysis of the extracted oil which the maximum percent of immature grains doesn‟t interfere in the oil‟s quality and therewith determinate a pattern of soya‟s qualification. The analysis showed variable chlorophyll content in every sample, growing in a practically uniform way according to the increase of immature grains. Percentages above 6% of immature grains couldn‟t be quantified because the chlorophyll exceeded the maximum quantity allowed by the used calculation. The value obtained from the yield oscillated a lot, with values swinging between 5% and 10% of extracted oil. Although it was not possible to evaluate clearly and gradually the obtained oil‟s reduction according to the increase of the immature grains, a significant reduction in the extracted oil‟s values from the 0 and 1% samples was noticed. The results showed in this task can ensure that it is recommended to avoid the incidence of immature grains, decreasing high spending with oil refining.pt_BR
