Resumo: dc.description.abstractThe water is susceptible to contamination from various sources. In the food industry, water is essential for the execution of all processes of cleaning and hygiene, as well as being a raw material for many products. Soon, the water used in the food industry must meet a standard of potability that offers no threat of contamination of the food product. In this context, the study aimed to evaluate the microbiological and physico-chemical water sources of ten small dairy region of Francisco Beltrão-PR, as well as identify possible causes of water contamination and even suggest ways of improving the quality of same. The study was conducted in partnership with the Technology Extension Project in Agribusiness Family Registered Municipal Inspection Service (SIM / POA) of the municipality of Francisco Beltrão - PR, signed between the Federal Technological University of Paraná - UTFPR and the municipal government of Francisco Beltran. Water samples were sent to laboratory diagnostics Agroindustrial Center (CDA) to perform physical-chemical and microbiological. The results of physicochemical analyzes presented in accordance with the law, while only a sample attended microbiological parameters required by the Ministry of Health, while the others showed counts of total and fecal coliforms. Given the situation, we conducted a literature review of studies that have affordable solutions for water treatment with the use of alternative chlorinators.pt_BR
