Resumo: dc.description.abstractThe search for healthy foods canse palatability has become a constant in the lives of many people. This study aimed to develop a soy-based drink flavored with jabuticaba fruit to meet the expectations of consumers about health, nutrition and functionality. The results of microbiological and physico-chemical properties were within the normal range required by law, calling the products made fit for human consumption. The sensory analysis was also performed satisfactorily and the aroma attributes the means reached no significantly different. Only attributes for appearance, flavor, color and overall impression that significant difference in the formulations 01, 03, 04, 05 and 06. At the level of acceptability of the product was accepted by a large number of untrained tasters. With the results presented, it is concluded that soy-based drink flavored with jabuticaba fruit is a good product.pt_BR
